Instructions

  1. Preheat the oven to 200 ° C top / bottom heat. Prepare a wide casserole dish or suitable frying pan / deep baking tray.
  2. Wash the chicken and pat dry with kitchen paper. Place the chicken belly down on the worktop and flatten it a little with both hands in the middle. The breastbone is allowed to crack. Then sprinkle all over with salt and pepper. Then sprinkle with paprika, rubbing in the spices a little. The smoked paprika powder comes on a little later.
  3. Place the chicken belly down in the tin or baking sheet and place in the oven. Set a kitchen clock to 15 minutes. Now carefully apply the liquid, native coconut oil (please no Palmin or similar) to the top of the chicken using a cake brush. It should be brushed all over the top, especially the wings and thighs. Fry for another 15 minutes. Now, with the help of two forks, carefully turn the chicken over so that the belly is facing up. Sprinkle some smoked paprika on top. Use the brush to carefully dab the fat that has already leaked out onto the belly, wings and thighs so that the spices do not run off. Set the kitchen clock to 15 minutes. Brush again with the fat, possibly apply more coconut oil. Fry for another 15 minutes. Now the chicken has been in the oven for 1 hour. It is now turned over again, sprinkled with smoked paprika and brushed with the fat again. Leave to fry for the last 30 minutes. Brush the grease again after 15 minutes.
  4. Of course, if your chickens are lighter, the roasting time should be reduced. Instead of smoked paprika powder, curry, for example, can also be applied. According to taste and preferences. The result is a wonderfully tender and very juicy chicken. This is also caused by coconut oil, among other things. Halve or divide several times with the help of poultry shears. A great low carb meal with (leaf) salad. Of course, potato salad also goes well with it. But then several people may be fed up with it.
