Halve the turkey and place it face down on the baking sheet. Cook at 190 - 200 ° C for 2 - 3 hours, per kg 1 hour, it is estimated. Turn the turkey halfway through the cooking time. Very important: pour the clarified butter over and over again during the baking time, this will make the meat nice and juicy.
When the turkey is ready, you can use the clarified butter as a sauce (if that`s not too greasy for you). The frying stock tastes very tasty when it is fried. My mother always offers 2 sauces, the butter sauce and the cream sauce that you find in my recipes.
Suggestion for a complete menu for Christmas: Chicken soup, turkey, red cabbage, dumplings, fried mushrooms in their own juice and the 2 sauces. Then a dessert of your choice.
