Peel or clean the potatoes, onions and peppers and cut into cubes. Cut the defrosted snow peas and beans into pieces, finely chop the garlic.
Sauté the vegetables in the hot olive oil. Pour in the vegetable stock, balsamic vinegar and milk and bring to the boil. Stir in tomato paste, paprika powder, salt and pepper and simmer for about 10 minutes until the vegetables are cooked through.
This stew also tastes delicious with chopped sausages.
Tips: Cooked with soy milk, the recipe is vegan. If you like it spicier, add some chili powder.
