Instructions

  1. Pluck the kale from the thick ribs and cook in plenty of boiling salted water in portions for about 3 minutes. Drain and roughly chop. Peel the onions and cut into wedges.
  2. Heat the clarified butter in a saucepan, sauté the onion wedges until translucent. Add the kale and sauté briefly. Pour in about 1.5 liters of water and bring to the boil. Stir in the broth. Add the smoked pork belly and bay leaves. Cover and let the stew simmer for about 1.5 hours.
  3. Peel the potatoes and carrots. Slice carrots, cut potatoes into pieces. Add the meatballs and the prepared vegetables to the cabbage after about 1 hour and cook at the same time.
  4. Finally, season the kale with mustard, salt and sugar. Serve hot.
