Pierce the meat several times with a sharp knife. Rub with the salt and then spread the smoke aroma on it. Rub everything in well and then cook in the Crock Pot on LOW for about 20 hours. Do not add any liquid, the meat has enough fat.
The meat is ready when you can cut it with 2 forks. Chop into small pieces and enjoy on a baguette.
For those who don`t have a crock pot, it can also be prepared in the oven. Wrap the seasoned meat tightly in aluminum foil and cook at 115 degrees for 20 hours. Under no circumstances should you open the foil in between, it has to be dampened in the foil. Shorten the cooking time a little for smaller pieces of meat.
