Instructions

  1. Wash the smoked pork and pat dry. Pepper vigorously on both sides.
  2. Heat a large saucepan and melt the clarified butter. Put smoked pork loin in the pot and fry all over over medium heat.
  3. Meanwhile, peel the onion and cut into quarters. Peel the garlic and roughly cut into cubes. Peel and wash the potatoes and also cut them into large cubes. Set aside in a bowl. Prepare the broth.
  4. Take the smoked pork from the pot. Briefly sauté the potatoes, onions and garlic in the frying fat. Pour in the broth. Admit Kasseler again. Add the caraway seeds and chilli. Cover and cook for about 1.5 hours. Stirring occasionally.
  5. Clean the leek and cut into thin rings.
  6. Take the smoked pork from the pot. Puree the potatoes. Add the leek. Season the stew with pepper, marjoram and freshly grated nutmeg. Put the lid on, bring to the boil and simmer.
  7. Meanwhile, remove the meat from the bone and cut into cubes. Put the smoked pork cubes back in the pot and cook for 15-20 minutes. Season again to taste and serve.
