Instructions

  1. Dough:
  2. Knead the flour, egg, salt and a little water into a firm dough. Let rest covered for 30 minutes.
  3. Filling:
  4. Chop the onions very finely and mix with the minced meat and parsley and season with salt, pepper and paprika powder.
  5. Divide the dough in half and roll out approx. 2 mm thick, cut into 2 x 2 cm squares and fill with the minced meat. Firmly press the opposite corners of the squares together to form a cross and place on a floured tray.
  6. Bring the salted water to the boil and cook the dumplings in it for about 10 minutes over medium heat.
  7. Sauce:
  8. Finely chop the garlic cloves, add a pinch of salt to the yogurt and stir.
  9. Heat the butter in a pan and briefly toast the paprika pulp and mint in it.
  10. Spread the dumplings directly on the plates with a slotted spoon and let cool down a little. Pour the yoghurt on top, then drizzle the pepper butter over the mantis.
  11. Vegetarian variant:
  12. Sauté the chopped onion in a little butter in the pan. Replace the minced meat with 4-5 boiled, coarsely mashed potatoes and add, season with salt, pepper and paprika powder. Fold the squares into triangles and press firmly. Instead of the paprika mixture, just drizzle hot butter over it.
