Instructions

  1. Drain the morello cherries in a sieve, collecting the juice.
  2. Measure out 170 ml (fill up with water if necessary). Mix the cornstarch with some of the cherry juice until smooth. Bring the remaining juice to the boil with lemon zest, sugar and vanilla sugar in a saucepan. Stir in the starch and bring to the boil again. Stir in the cherries. Let the compote cool down, stirring occasionally. Remove the lemon peel.
  3. Peel the banana and puree with lemon juice. Stir in low-fat quark, cream yoghurt and sugar. Whip the cream until stiff and fold in.
  4. Finally, fill the banana quark into tall long drink glasses and pour the compote on top.
