Mix the onions, garlic, sugar and ginger with the fish sauce. Put the sauerkraut with the juice in a bowl and stir in the onion mixture well. Then sprinkle the chilli flakes over it and mix in thoroughly. Be careful!
Fill the Kimchi German Style into a well-closable plastic box. Let it sit for at least 4 hours and then serve as a side dish to rice and fried foods like the original Kimchi.
It can be kept in the refrigerator for a few days. I think it tastes just as good as the original kimchi! It`s just visually different, because the herb is finely cut.
A quick variant, without the laborious salting and preparation of the herb. And you still have the valuable, lactic fermented vegetables!
