Instructions

  1. King oyster mushrooms have such a fine aroma to my taste that I prefer to fry them with just a few onions so as not to cover up the taste with breading, sauces or the like.
  2. Otherwise, we like to grill king oyster mushrooms straight into slices.
  3. Cut the onions into half fine rings (crescents) and fry them in a large pan with plenty of clarified butter over medium heat. When the onions have taken on a little color, add the king oyster mushrooms - cut into bite-sized pieces.
  4. Fry for approx. 30 - 40 minutes over medium heat - turn carefully several times. Season to taste. I use a poultry seasoning mix. Try it in between - king oyster mushrooms stay firm to the bite - at the end just fry them briefly over high heat so that the mushrooms turn nice and brown.
  5. There was also a baguette with herb butter and a bit of bean salad today.
