Instructions

  1. Put the bulgur in a bowl and pour boiling hot water over it. The water should stand approx. 2 cm above the bulgur and let it steep.
  2. In the meantime, sweat the onion in the oil, add the paprika and tomato paste and let simmer a little more. Deglaze with about 5 tablespoons of water and pour over the bulgur. Stir well and let cool down.
  3. When the bulgur has completely cooled down, add the diced tomatoes, cucumber and lemon juice, stir well and season with salt, pepper and paprika powder. Finally, add the parsley.
  4. If you like, you are welcome to add other vegetables such as hot pointed peppers, etc. The imagination knows no limits.
