Instructions

  1. Mix the flour, salt and eggs and slowly add water to the mixture until a firm dough is formed.
  2. Bring water to a boil in a large saucepan with salt. Tear off small, fingernail-sized pieces from the dough with your fingers and add them to the boiling water (they will get even bigger in the water). Do not put too many clumps in the water at once, otherwise they could stick together. When the clumps rise, take them out of the pot and let them drain. Process the dough little by little.
  3. At the same time, melt some fat in a pan and fry the diced bacon. Add the onions and fry until brown. Instead of bacon, leftover sausage or other meat leftovers can also be processed. Finally add the Klütern and mix everything together and season with salt and pepper.
  4. The dish is a typical poor man`s meal from a time when there was often not so much more besides flour, eggs, fat and cabbage. Whenever there weren`t any eggs, the chunks were simply made with water
  5. You can add sauerkraut that you have fried in the pan beforehand. Then I add some sugar to the herb so it doesn`t get too sour.
