Mix all ingredients into a firm, malleable dough and let rest for 20 minutes.
Shape the dough into 1 cm thick rolls. Cut off 0.5 cm long pieces from each. Form little hats from these dough discs over a (floured) finger and cook them in a saucepan with salted water for about 15-20 minutes.
Take out of the pot with a ladle and serve.
Knöpfle are a very good accompaniment to all sauce dishes.
