Instructions

  1. Preheat the oven to 130 °.
  2. For the wild garlic sheep cheese paste, the sheep cheese with the coarsely chopped wild garlic is put in a mixer and pureed. Add enough olive oil to make a spreadable mixture. Season with a little lemon.
  3. Cut the meat into 6 steaks, pepper and coat one side with the herb paste. Wrap each ham in 2 slices and pin them tightly. First fry well on the side without paste, then briefly on the other side and turn over again. During this roasting process, add the coarsely chopped herbs and possibly a few squirts of lemon juice and zest of your choice as aromatics to the pan. Transfer everything with the herbs to a baking dish.
  4. Boil the frying stock in the pan with a little Noilly Prat and drizzle over the meat. Cook everything in the oven at 130 ° for approx. 25 minutes, reducing the last 10 minutes to 100 °.
  5. You can also fry an onion with the meat, this gives an even better flavor.
