Peel the kohlrabi and grate it into a bowl with the grater. Salt and stir a little. I take salt with rosemary. Quarter and core the apples and cut into thin slices.
Prepare a vinaigrette from apple cider vinegar, olive oil, sugar, salt, pepper, garlic and finely chopped fresh parsley and pour over the apples. You can refine the vinaigrette with thyme or rosemary.
Put the pine nuts in a hot pan and let them brown lightly. Then add everything to the kohlrabi slices.
