Wash the kohlrabi, carrots and apple. Peel the kohlrabi and carrots, core the apple. Roughly grate all three ingredients, place in a bowl and immediately drizzle with the squeezed lemon juice.
Put the vinegar, agave syrup, salt and pepper in a small bowl. Fold in the rapeseed oil and pour the dressing over the salad. Mix the salad well.
Cut the chives into rolls with scissors and sprinkle over them.
