Instructions

  1. Thaw the kohlrabi slices and pat dry.
  2. Roast the cashew nuts and grind them in the chopper.
  3. Mix the flour with half a teaspoon of salt and pepper and pour into a plate. Beat the eggs until frothy and pour into a second plate. Put the breadcrumbs in a third plate and rub the parmesan on top. Add the ground cashew nuts and mix everything in 2 tablespoons of olive oil.
  4. Preheat the oven to 170 ° C top / bottom heat.
  5. Bread the kohlrabi slices. To do this, first turn them in flour, then pull them through the eggs and then press them into the breadcrumbs mixture.
  6. Line a baking sheet with parchment paper and place the kohlrabi slices on top.
  7. In the meantime, peel the potatoes, cut them into slices and put them in water so they don`t turn brown. Peel an onion and cut it into small cubes.
