Cut the pork fillet lengthways into 5 very thin strips (like roulades). For this you need a very sharp knife with a thin blade.
Pull the strips flat with the knife and cut them in half crosswise so that you get 10 strips.
Pepper each strip, cover with 1 slice of ham, 2 sage leaves and 1 slice of Gouda cheese and roll up. Put 5 rolls each on a long wooden skewer.
Heat the lard in a pan and fry the skewers until golden brown on both sides. Then pour off the lard. Add the herb butter to the skewers and fry again briefly.
