Instructions

  1. Kürtöskalacs, as the Baumstriezel, originally from Transylvania, is called in the original, is a really delicious baked product, which also fits perfectly into the upcoming Christmas season.
  2. 1. Sift the flour into a bowl.
  3. 2. Crumble the yeast into the lukewarm milk, add 1 pinch of sugar and 2 tablespoons of flour, stir everything together and let rise in a warm place for about 10 minutes.
  4. 3. Now add the sugar to the flour, optionally also the vanilla sugar and a pinch of salt, mix everything and make a well in the middle with your hand. Now put the egg, the softened butter, the lemon peel and the pre-dough in there. Knead everything into a smooth dough and let rise in a warm place for about 30 minutes until the volume has roughly doubled.
  5. 4. Knead the dough briefly on a lightly floured work surface and cut in half. Either roll out the half of the dough 1 cm thick and then cut into 2 - 3 cm wide strips or roll it with your hands into a cord with a diameter of approx. 2.5 - 3 cm. The cord will then be at least three feet long at the end.
  6. 5. Wrap a rolling pin completely, including the handles, with aluminum foil and then brush with melted butter. Now wind up the string or strips of dough tightly. Then roll again on the work surface so that any gaps are closed.
  7. 6. Brush the dough with melted butter and roll it in the cinnamon-sugar mixture (or another mixture, depending on your taste) so that the dough is covered all around.
  8. 7. Now put the rolling pin in a baking dish or roasting pan or place it on a baking sheet lined with baking paper and bake in the oven at 180 degrees, convection 160 degrees, for 15 minutes, then brush with melted butter and bake at the same temperature for another 10 minutes .
  9. 8. Push the finished baked tree sticks from the rolling pin while still warm and allow to cool.
  10. 9. Have fun baking and then have a good appetite! Incidentally, it tastes lukewarm best!
  11. Note: The cinnamon and sugar mixture can also be replaced with ground hazelnuts or almonds or desiccated coconut.
