- Preheat the oven to (as precisely as possible) 100 °.
- Lamb (if you use a slice of a leg, it is advisable to either remove the skin or make several incisions) with salt and pepper.
- Heat the olive oil in a pan, fry the lamb on each side for approx. 2 minutes.
- In the meantime, spread out a sufficiently large piece of double-layered aluminum foil and sprinkle with thin slices of garlic.
- Place the seared lamb on the garlic and close the aluminum foil. Put the package in the oven for 20 minutes.
- Under no circumstances cook or let the juices spread out in the switched off oven. This makes it tough and dry.
