Mix the sugar, coriander and allspice and caramelize in a pan. Chop the walnuts and stir in. Let cool on parchment or baking paper.
Clean, wash and spin dry the lettuce. Wash the figs, cut off the ends and cut in half. Briefly fry the cut sides in a pan with hot oil. Halve the ham slices.
For the dressing, peel the garlic and cut very finely. Mix with lemon juice and zest, vanilla pulp, vinegar and honey. Gradually withhold the oil. Season to taste with salt and pepper.
Mix the salad with the dressing and distribute on the plates. Place the figs and ham on top. Scatter the caramelized nuts on top.
