In a bowl, mix the cream, broth, vinegar, oil and honey together well with a whisk, season with salt and pepper. Cored the apple, but grate it unpeeled and add it. Mix everything well.
Arrange the lamb`s lettuce on 4 plates and drizzle the sauce over them. Scatter the walnuts and red pepper over the top.
