Instructions

  1. Finely grate the parmesan. Place on a baking sheet lined with baking paper and shape into a circle. The circle may only be a few millimeters thick. Bake in the oven at 200 ° C until golden brown (convection not recommended!). Let cool and break into small pieces.
  2. Peel the onion and cut into thin rings. Put salt, pepper, sugar, oil and balsamic vinegar in a bowl, stir well and marinate the onions in it for about 10 minutes.
  3. Peel the grapefruit so that the whites are removed and the flesh loosen from the separating membranes. Halve the avocado, remove the stone and dice the pulp. Wash, clean and spin dry the lamb`s lettuce.
  4. Spread the salad on the plates, top with the onion rings, the avocado cubes and the grapefruit fillets. Scatter the parmesan chips on top.
