Remove the roots from the lamb`s lettuce, wash the lamb`s lettuce and let it drain. Cut the bacon into small cubes and fry until crispy in a pan without any additional fat. Remove the bacon from the fat. Deglaze the bacon fat with balsamic vinegar. Add honey and let it boil down until a thick sauce is formed.
Peel the orange and cut into small pieces. Crumble walnuts. Pour over the lamb`s lettuce together with the bacon cubes. Pour thickened, cooled dressing over it. If there is not enough dressing, extend with walnut oil.
