Cut both the beetroot and the apple into pieces, slices, cubes or whatever else you can think of and put everything aside.
For the dressing mix the olive oil (if you like, you can also use a little more oil - I just always prefer it when it`s not that oily), the mustard and honey in a bowl and then add some water, until the dressing has a good consistency. Now add a little lemon juice to the dressing and season it with salt and pepper.
Finally, you lift the lamb`s lettuce, beetroot and apple under the dressing and arrange the salad on a plate. If you like, you can sprinkle sunflower and / or pumpkin seeds on top as the icing on the cake.
