Wash and spin the lamb`s lettuce. Cut the beetroot and feta into 1 cm cubes and add to the lamb`s lettuce. Caramelize the sugar in a pan and toss the walnuts in it. Then pour the ingredients for the vinaigrette over the salad and mix loosely with your hands. Finally, spread the caramelized walnuts over the top. Add half a lemon so that everyone can spice up their portion as they wish. If it is too acidic, you can compensate with a little buttermilk.
A great salad that is suitable as a starter for at least 4 people or as a main course for 2. Instead of lamb`s lettuce, arugula also works.
