Instructions

  1. Clean, wash and spin dry the lamb`s lettuce. Roast the walnuts in a pan without fat. Fry the ham in a pan until crispy and drain on kitchen paper.
  2. Wash the apple, remove the core with an apple cutter and cut into slices. Fry in the frying fat on both sides. Sprinkle the sugar on top and let it caramelize slightly.
  3. Thaw raspberries. Finely chop the shallot.
  4. For the dressing, mix the honey, raspberry vinegar, salt and pepper together well. Beat in the walnut oil in a thin stream with the whisk. Fold in the raspberries and shallots.
  5. Put the lamb`s lettuce in a bowl and mix with the vinaigrette. Arrange on plates and serve with the apple slices, walnuts and ham.
