Spin the very well washed lamb`s lettuce dry, cut into small pieces if necessary and then arrange on a salad plate. Melt the butter, sugar and wine in a pan and caramelize the roughly chopped walnuts in it. Then remove the walnuts and let them cool. Puree the raspberries with the vinegar, oil and the spices using a blender. Drizzle the dressing over the salad and sprinkle with the nuts. Finally, decorate with cheese shavings.
