- Clean the lettuce. Make a vinaigrette from balsamic vinegar, olive oil, salt, pepper, salad herbs and some mango juice and set aside.
- Halve the sheep`s cheese in thickness and then quarter. Wrap the individual pieces with a slice of pork belly and fry them in olive oil.
- Dress the salad in the vinaigrette, distribute on plates. Grate the sheep`s cheese on top, parmesan on top and garnish with balsamic cream.
