For the dressing:

- Sort the lamb`s lettuce, clean, wash and shake dry.
- Rinse the figs, pat dry, remove the stem and cut into quarters. Roughly chop the walnuts.
- Mix the maple syrup, vinegar, orange juice, sambal oil and oil into a dressing - season with salt and pepper.
- Melt the goat cheese with butter in a pan.
- Heat the nuts with sugar in a pan and let them caramelize.
- Cut the bacon into strips and fry them in a non-stick pan until crispy.
- Spread the lettuce, bacon and cheese on the plates, drizzle with the dressing. Sprinkle the nuts on top and serve warm.
- It goes well with baguette and a light red wine.
