Wash, clean, drain or spin dry the lamb`s lettuce (be careful with very young lamb`s lettuce or the often offered French lamb`s lettuce (Mache de Nantes), which does not tolerate heavy spinning).
Fillet the orange and grapefruit: To do this, peel the whole of the white, catch the dripping juice, use a sharp knife to cut the slices between the skins. Squeeze out the leftovers.
Mix the juice of the two fruits obtained in this way with twice the amount of walnut oil, pepper and salt.
Mix with the salad.
I use this recipe when I need the filleted fruit for another menu item. But you can also mix them with the salad, then it needs a little more pepper.
The time indicated depends somewhat on the condition of the lettuce; if it is fresh outdoor lettuce, washing and cleaning will take longer.
