- Leave the bacon with 1 tablespoon of olive oil to make crispy cubes
- Mix the remaining ingredients to a vinaigrette, but do not add any oil yet!
- Before serving, add the bacon cubes to the vinaigrette and
- either the fat at the same time (gives a delicious taste, but may be
- a bit greasy when it gets cold) or instead of the bacon, complete the vinaigrette with approx. 3 tablespoons of olive oil.
- Arrange the salad on plates and drizzle with the vinaigrette.
- Variation 1: Put a few more orange fillets on the lamb`s lettuce.
- Variation 2: Put the still roasted pine nuts on the lamb`s lettuce or both.
- Incidentally, it also tastes very good with rocket!
