Wash the lamb`s lettuce and let it drain well (spin or dry with paper). Lightly toast the pine nuts in a pan. Peel the oranges, cut them into slices and catch the juice that drips out.
Spread the lamb`s lettuce on a large plate and arrange the oranges nicely on top. Scatter the pine nuts on top. Pour the collected orange juice and a generous amount of olive oil, salt and pepper over it. If you want, you can decorate or vary the whole thing with a little crema di balsamic vinegar.
