Prepare the lamb`s lettuce, cut off the ends of the small bouquets and wash and dry the leaves several times. Peel and quarter the pears. Remove the heart and kernels. Cut each quarter as a fan with very thin slices. Cut the cheese into small cubes. Divide the lamb`s lettuce on four plates and place two sliced pear quarters on top. Garnish with the cheese cubes. Pepper generously (especially the pears). Mix the vinegar, oil and a pinch of salt in a bowl. Pour this sauce on the plates and serve immediately.
