Wash and drain the lamb`s lettuce. Peel the pears and cut into thin wedges. Coarsely chop the walnuts with your hands and place in a large bowl with the pears and lamb`s lettuce. Cut the brie into very thin slices and decorate the salad.
For the dressing, heat the honey together with the vinegar in a saucepan until it foams. Add the olive oil and season with salt and pepper. Depending on the intensity, more or less vinegar may be necessary.
