Wash the lettuce thoroughly and spin dry. Divide the chicory into individual leaves and cut into pieces. Cut the cleaned mushrooms into strips and the peeled shallots into small cubes. Roughly chop the nuts. Cut the salmon slices into wide strips. Set aside half of the salmon strips. Put all remaining salad ingredients in a bowl and mix together.
For the vinaigrette, mix the lemon juice with salt and pepper until the salt is dissolved. Then stir first the mustard and then gradually the oil with the lemon juice, so that a smooth sauce is created. Pour the vinaigrette over the salad ingredients and mix thoroughly. Scatter the remaining salmon strips over the salad as a garnish.
