Cut the pears into pieces approx. € 2. Mix the sugar, honey, cinnamon and pear brandy together. Marinate the pears in the liquid for at least 1 hour.
When the time has elapsed, wash the lamb`s lettuce and garnish on the plates. Fry the pears in a pan with 1 piece of melted butter. Add the walnuts. Roasting time approx. 7 minutes.
Remove the pears from the pan. Add a piece of butter, add the mustard. Briefly bring to the boil with the balsamic vinegar.
Arrange the pears and walnuts on the lamb`s lettuce, the pears should still be warm. Then pour the liquid from the pan over it.
