Instructions

  1. Peel, wash and cut the potato into very small cubes. Cook in the broth. (I take a filled coffee pot.) Strain the potato through a sieve or finely mash it with a fork. Return to the broth, initially taking 2/3 of the broth and adding it later if necessary.
  2. Finely dice the shallot, mix with the mustard, vinegar, oil, salt, pepper and sugar. This mass can be mixed separately or immediately mixed with the potato-broth mass. It makes a thick dressing.
  3. Clean and wash the lamb`s lettuce and spin dry thoroughly. Arrange the respective portion on the plates and pour the dressing over them. Please do not stir in.
  4. Chives or spring onions can also be used instead of the shallot.
  5. If you like, you can also add a little garlic to the dressing.
