A simple and quick recipe for lazy pita bread with cherries and custard. Sweet custard, sweet and sour cherries and thin crunchy “dough” are a delicious combination. Lavash is smeared with an egg with vanilla sugar and it gets a completely new taste and looks like crispy thin waffles. The cake is amazingly tasty and insanely simple to prepare.

For the “dough”:
Lavash – 1-2 leaves (150-200 g)
Egg – 1 pc.
Sugar – 1 tbsp
Milk – 1 tbsp
Vanilla sugar – 10 g
For the cherry filling:
Cherries (already peeled) – 250 g
Sugar – 1 tbsp (to taste, depending on the acidity of the cherry)
Add sugar to the cherries and boil for 15 minutes. Dissolve the starch in a little water, add to the cherries and cook until very thick.
For the custard, combine egg, sugar and starch. Stir with a whisk. Add milk and cook until thick, stirring constantly. When the cream is thick, add the vanilla sugar and stir.
Combine the egg with vanilla sugar and milk. Mix very well with a fork.
Preheat the oven to 180 degrees. Now you can collect lavash pie. I have two sheets of lavash, but it’s better to make one large one. Place the custard and cherries on one pita bread in the centre. Grease the part of the pita bread free from the filling with an egg-milk mixture with sugar, thanks to this it will no longer be just pita bread, but a delicious sweet dough with a vanilla aroma.
Roll the stuffed pita bread into a roll, greasing the pita bread with the egg mixture and on the back. Also, grease the second sheet of pita bread with an egg mixture and wrap pita bread with cherries and custard in it, smearing the pita bread with each folding. Smear the surface of the pita bread well with the egg mixture.
Bake a lazy lavash pie with cherries and custard for 25-30 minutes at 180 degrees, until crispy on top of the pita bread.
Sprinkle the finished pita bread with cherries and custard with icing sugar on top.
