Ingredients

• 80 ml vegetable stock
• 4 teaspoons pumpkin seed oil
• 4 teaspoons mustard, hotter
• 4 teaspoons honey, milder
• 40 ml balsamic vinegar, white
• 0.5 teaspoon ½ orange peel, untreated
• 0.5 teaspoon ½ lemon peel, untreated
• salt and pepper
• 1 cup herbs (rocket, parsley, chives)
• 300 g lamb`s lettuce and / or spinach
• Iceberg lettuce

Instructions

1. Prepare a dressing from the first 8 ingredients. Sort out the remaining ingredients, wash, cut into small pieces if necessary and place in a bowl. Make the salad with the dressing.
2. The amount of lemon and orange peel refers to fresh zest or finely chopped zest. When using finished products, the quantities given may change! Please dose carefully and season to taste in between!
3. If you like rocket, you can use this dressing for a rocket salad instead of just using the rocket as a herb.
4. If rocket is not available, garden cress or another strong cress-like herb should be used.
