Cut the toasted bread into small pieces and place in a bowl. Pour the juice of half a lemon over it and turn the bread in it. Set aside for 5 minutes.
Put all the vegetables, herbs and oil in a larger bowl, mix carefully and season with salt and pepper. Then add the bread and the remaining lemon juice. Mix gently again and serve immediately.
This is a basic recipe, it can be changed according to taste. I add radishes and fresh peppermint.
