Instructions

  1. Let the brown sugar caramelize with the water, stirring constantly. First the sugar becomes crumbly, then runny (don`t let it get too dark). Pour the caramel into 6 ovenproof molds (e.g. muffin molds) so that the bottom is covered.
  2. In a saucepan, bring the condensed milk and the cream to the boil while stirring. Now add the sweetened condensed milk. Season with vanilla sugar. Whisk egg yolks with whole eggs and stir into the cream milk. Do not let it boil anymore, otherwise the egg will coagulate! When the cream becomes thick, pour it into the prepared molds.
  3. Preheat the oven to 150 ° C top / bottom heat. Bake the Leche Flan in a water bath on the middle rack for about 30-40 minutes - but the flan should only brown slightly!
  4. Chill the Leche Flan. Remove from the edge with a knife, turn out onto a dessert plate and serve.
