Instructions

  1. Peel the apple and onion and cut into large pieces. Put these in a deep pan or casserole dish. Add half of the goose stock.
  2. Season the goose legs with salt and pepper and place on the apple and onion mixture.
  3. Cook in a preheated oven at 80 degrees top / bottom heat for 3 hours. Then turn the stove up to 180 degrees and fry for 2 hours. Turn the legs every now and then. Finally pour in the rest of the stock.
  4. Transfer the brew to a saucepan. Puree with the hand blender. If the sauce is too thin for you, you can use a sauce thickener to help. For us it is so perfect.
  5. Grill the goose legs on the grill rack for 10 minutes in the activated grill until crispy.
  6. We traditionally have red cabbage and dumplings with it.
