Instructions

  1. Peel the shallots and cut into fine rings. Froth the butter in the pan and sauté the shallots briefly. Pour in the broth, wine and lemon juice and bring to the boil. Season to taste with salt, pepper and the sugar.
  2. Wash the chicken schnitzel briefly, pat dry, season with salt and pepper on both sides and place in the sauce. Cook in it for about 10-15 minutes, until the sauce has boiled down a little. If it is too runny, stir in cold bits of butter or some flour (mixed with a little water). Chop the basil and add just before serving.
  3. Rice, baguette or boiled potatoes are suitable as a side dish.
  4. I make potato chips: Peel 300 - 400 g potatoes, cut into slices. Briefly marinate in a bowl with salt, pepper, 1 tablespoon of oil, paprika powder and dried herbs (e.g. rosemary or oregano). Spread on a baking sheet and bake in the oven at 180 ° C for 15-20 minutes.
