Instructions

  1. Mix the soft butter with the cream cheese thoroughly. Add the sugar, egg and vanilla and continue to stir with the mixer at half strength until the batter is light and creamy. This takes about 5 to 7 minutes. Add half of the flour, baking powder, salt, cornstarch and lemon zest and continue stirring. Add the lemon juice and the rest of the flour and mix everything well.
  2. Now the dough has to rest covered in the refrigerator for approx. 2 to 3 hours, or even better overnight.
  3. Preheat the oven to 175 ° C top / bottom heat.
  4. Shape 1.5 teaspoons of dough into small balls and place them on a baking sheet lined with baking paper. Bake for about 8-10 minutes.
  5. Now take them out of the oven and flatten them lightly while they are still hot. For this you can use a saucepan, a spatula or the ball of your hand (again the note: be careful!).
  6. Make a frosting from the water and powdered sugar and decorate the cookies with it.
  7. As soon as the cookies cool down and the butter becomes a bit hard, they are ready for snacking.
  8. As with every cookery recipe, it is desirable that these delicacies are still a little soft in the middle.
