Instructions

  1. Cut the chicken breast fillets into approx. 2.5 cm pieces and place in a large freezer bag.
  2. Finely grate one orange and one lemon and squeeze out the juice. Peel the garlic cloves and press them through the garlic press. Put together with the honey, the olive oil, the mint and the coriander in a small bowl and stir well with the magic wand. Season savory with salt and pepper.
  3. Pour this marinade into the bag for the meat, close the bag tightly and knead everything tightly with your hands until the marinade surrounds all the meat cubes. Let it steep in the refrigerator for at least 8 hours; repeat the kneading process from time to time.
  4. Heat up the grill.
  5. Meanwhile, remove the chicken cubes from the marinade and drain on paper towels. Please keep the marinade.
  6. Now put the meat cubes on long metal skewers (Schaschlick skewers). Make sure that they are not placed too close together, otherwise they will not cook evenly and will remain raw in the middle.
  7. Grill the lemon chicken skewers on the grill over medium heat for about 6-10 minutes; Make sure to turn regularly and brush with the marinade again and again. Don`t let it get too dark!
  8. Arrange the grilled skewers on a large platter, garnish with a few sprigs of mint and citrus zest and serve immediately.

  10. If you like, you can replace the lemon peel with the same amount of lime peel. Instead of the chopped mint, chopped flat-leaf parsley also tastes good.
