Cut the ginger into small slices and place in a saucepan. Peel the lemons and add the peels to the ginger. Add enough water to cover everything. Simmer gently for 20 minutes.
In the meantime, squeeze the lemons and mix with the honey.
Drain the ginger and lemon peel in a sieve and collect the brew. Allow to cool, then mix with the honey and lemon juice and fill into a bottle. Store in the refrigerator.
Enjoy a sip every now and then.
Tip: If the mixture is too strong for you, you can work with more water and honey.
