Clean the mushrooms and cut into thin slices. Wash, quarter and core the tomatoes and cut into very small cubes. Also finely dice the pickled cucumber. Clean the garlic, cut into slices and finely chop. Chop the parsley. Mix all ingredients.
For the marinade, mix together lemon juice, oil, salt, pepper and sugar. Possibly add cucumber broth to taste.
Mix the marinade with the chopped salad ingredients and let rest for about 15 minutes.
