Ingredients
Lemon (zest and juice) – 1 pc.
Butter – 70 g
Eggs – 3 pcs.
Sugar – 200 g
Wheat flour (premium grade) – 320 g (2 glasses of 250 ml)
First of all, let’s prepare a lemon! We remove the zest from all over the lemon, after which we need to squeeze out the juice. If you don’t have a citrus juicer, there is one simple way to squeeze lemon juice quickly and without waste. We heat the lemon in the microwave for literally 10-30 seconds (it should become warm, but not hot). Cut the lemon in half, make deep punctures and squeeze out as much juice as possible.
Break eggs into a bowl and send sugar and salt to them.
Beat well with a mixer or blender.
If you plan to use a bread maker, at this stage you can pour the eggs beaten with sugar and salt into the bowl of the bread machine. And add all the remaining ingredients directly to it. The bread maker will knead a homogeneous dough on its own. If we plan to bake in the oven, then we need to add softened butter, lemon juice, and zest and mix everything well again.
Add dry ingredients – wheat flour and baking powder. Knead a homogeneous, smooth dough.
To bake a pie in a bread maker, select the “muffin” or “baked goods” program. After the end of the program, it is imperative to check the pie for readiness using a wooden skewer or a toothpick (since the baking programs for each individual model of the bread maker may have differences in the cycle and baking time).
A silicone mold is best for oven baking. We send the lemon pie into an oven preheated to 180 degrees for about 35 minutes.
