Instructions

  1. While heating, dissolve the sugar in the water. Add the lemon juice. If you squeeze the lemons yourself, knead the lemons beforehand, then give them more juice. Let the liquid sit for an hour. Beat the egg whites and mix with the lemon liquid. Put the mixture in the ice cream maker or in a lockable container in the freezer and stir every half an hour to destroy the ice crystals. Halfway through, add the lemon balm to the sorbet.
